If we could only pick one thing that differentiates Kavkaz Kebab from other restaurants, it would be its approach to cooking. Kavkaz Kebab utilizes the cooking style used by our grandfathers in Azerbaijan. Azerbaijan, a small country situated on the Caspian Sea, is known for its outstanding cuisine offering various types of kebabs and other Middle Eastern style dishes.
The name Kavkaz comes from Russian pronunciation of the geographical location of Caucasus in far Eastern Mediterranean part of the world, north of Turkey, Iran and south of Russia. It's a place where countries are known for their rich culture and wonderful food. Occupying roughly 170,000 sq mi (440,000 sq km), it is divided among Russia, Armenia, Azerbaijan and Georgia and forms part of the traditional dividing line between Europe and Asia. It is bisected by the Caucasus Mountains; the area north of the Greater Caucasus range is called Ciscaucasia and the region to the south Transcaucasia. Inhabited from ancient times, it was under nominal Persian and Turkish suzerainty until conquered by Russia in the 18th–19th centuries.
